Ingredients
- 400 g beef steaks
- 1/4 cup bottled lime, lemongrass and soy marinade
- 200 g packet mung-bean thread/glass noodles
- 1/2 cup each of mint, basil and coriander leaves
- 2 cucumbers, chopped
- 2 cups chopped broccoli
Method
1. Combine beef and marinade in a dish, cover with plastic wrap and allow to marinate for 20 min.
2. In a large bowl, soak noodles in boiling water for 5 min or until soft. Drain, rinse in cold water and drain thoroughly. Place into a large bowl, add herbs and vegetables.
3. Heat grill pan or barbecue to high, cook beef to medium-rare. Stand for 5 min. Slice thinly, toss with salad and Chilli Dressing. Garnish with extra chilli and serve with lime wedges.
