Ingredients
- 4 covers
- 500g chuck or blade
- 100g beef fat (dry aged fat from butcher would be great!)
- 1 onion browned in frying pan
- 1 egg
- salt and pepper
- half a clove and half a juniper (crushed to a powder) or you could use pinch of bush mix.
- Mix all together, then mould into 4 nice patties (or 12 little ones)
Method
For the perfect burger:Toast the bun, chargrill the pattie and serve pink and juicey.
On top of the burger place the grilled smokey bacon, followed by the slices of cheddar cheese. Then melt in oven for approx. 1 min.
On the bottom half of the bun a little tomato sauce, with a few slices of red sliced toms, then place the pattie with bacon and meted cheese on top, then a little bit of fresh iceberg,few red onion rings. On the top of the bun a little aioli, then place on top and gently push together.
